Banana bread

Partially Failed experiment.

I am finding it very difficult to get the right texture and flavor in this banana bread.
I have very high standards since my mother in law makes the best banana bread in the world. (her recipe is right
here )

This recipe comes out with awesome flavor but the inside stays gooey and unappetizing.

I say partially because I am going to try them as pancakes. They should be thin enough as pancakes to cook all the way through.
That’s the theory. Keep your fingers crossed.

If it works, that will be the next recipe I post.

Banana ice cream

I may just have to change the name of my blog to “bananas”, at the rate I’m going.

This simple, single ingredient, icecream is sooooo quick and easy.

Peel 5 ripe bananas and stick into a ziplock bag into the freezer for 1 hour.
Pull out and put into a blender or food processer and blend until smooth and creamy.
Serve

Makes 2/3rds of a quart – aproximately and tastes wonderful.
I thought maybe I’d add chocolate next time and see.

Chocolate Heaven

Ingredients:

5 bananas
7 whole pitted dates
1 Cup of cocoa
1 1/2 tsp of vanilla
1 1/8th cup of milk
1 Table spoon of maple syrup
1 1/2 Tablespoon extra virgin coconut oil
1 cup heavy cream

Directions:
make the chocolate mixture first.
Put all the ingredients (except heavy whipping cream) into a food processor or blender and puree until very smooth.
Put that mixture into the freezer for 30 minutes
While it is freezing make whipped cream.
Fold the whipped cream into the chocolate pudding mixture.

Eat and feel heaven smiling down on you.

I plan on making something similar to french silk pie with it.

Ingredients:
1/2 cup of cashew butter
1/2 cup of almond butter
1 egg
1/4 cup of honey

preheat oven to 350 degrees
Mix all ingredients together,
tablespoon the dough onto parchment paper and squash with a fork
Cook for 8 minutes (approximately)

ingredients:
1/4th cup of Flax meal
1/4th cup of almond flour
3 eggs
2 tsp baking powder
1/8th cup of butter
1/8th cup of milk
1/8th tsp vanilla
1/2 tsp honey
pinch of salt

Mix all dry ingredients together – mix well
Add warmed butter and milk into the dry
add eggs and honey

Mix well, adding extra almond meal if the mixture is too wet
cook like normal pancakes

Really really good!
